Potato/Onion and Farmers Cheese/Dill Pierogi

Ingredients

  • 1 ½  cup mashed potatoes
  • 1 cup fried onion
  • 2 (7.5-oz) packs farmer cheese
  • a bunch of fresh dill, chopped
  • 1 egg
  • 3 (16.3-oz) cans Pillsbury grands flaky layers biscuits

Directions

Preheat oven to 350 F

Make mashed potatoes (I had leftovers); cut an onion (4 small onions) into small pieces and fry it until barely golden. Stir the onion into the mashed potatoes.

Mix together farmer cheese, an egg, and dill

Cut each biscuit into three thin layers

Place a small spoonful of the filling into the center of each round. With water, moisten the edges of the dough, fold over, and press together with your fingers to seal the dough

Put pierogi on a baking paper. With a knife, poke a few holes into each pierogi

Bake 19-20 minutes or until golden
